Roast
Descriptions
The following roast selections
are available from Valley of the Moon Roasting Company. We provide these roast
descriptions and conditions to help you select the product that is best suited
to your taste.

1. Light Roast – sometimes
referred to as cinnamon roast. The bean surface is a very light brown color and looks
quite dry. It often has a very tart character. |
|
2. Medium Roast – (American Roast) –
medium brown color, dry on the
surface of the bean. Generally good, slightly sweet flavor. |
|
3. Full City Roast –
a noticeably darker roast without
the tangy character of the French Roast. This roast begins to make the surface of the
bean shiny and the oil really comes to the surface of the bean after it has left
the roaster. The oils are not caramelized, thus creating a dark and almost sweet roast
profile. |

4. Italian Roast/Espresso Roast –
a darker roast than the Full City
Roast, and lighter than the French Roast. A perfect balance between the two. This roast
brings the oil completely out to the surface but it discharges just before caramelizing
begins so you get a rich dark character without any hint of carbonizing (burnt). |

5. French Roast –
a good French roasted coffee will
have a strong dark roasted character. This roast brings the coffee oils heavily to the
surface of the bean and then caramelizes on the surface for a period of time to create
an almost carbonizing character (slightly burnt character) that is tangy to the
taste. |
